Pineapple Natural is a natural coffee grown in the Apaneca Ilamatepec region of El Salvador by Mauricio Salaverria, a producer widely recognized for his work on processing.
Mauricio wanted to develop a "recipe" to enhance the tropical profile of a coffee.
This coffee therefore dries in the shade, on raised beds, for 30 days, whereas a traditional natural coffee dries between 10 and 15 days. The producer ensures that the coffee is stirred regularly for even drying, and time does the rest.
It is thanks to this longer drying period that this coffee has pineapple notes. And its name naturally followed.
This coffee is therefore very fruity and perfectly balanced: the acidity is lively without being aggressive and the natural sugar of the bean, developed through the natural process, brings sweetness and roundness.
